The cooking operation that happens inside a kitchen will determine the amount of contaminant and type of contaminant and therefore, kitchen exhaust filtration must incorporate a wide range of filtration types and be versatile to provide adequate solutions. Many of the commercial kitchens use grease and oil trapping filters at cooking location to capture the particles. These may be Baffle filters or other equipment which comes installed inside the kitchen hood to remove initial amount of grease aerosols and particulate. But these devices will not take care of more than 90% of the contaminants and the exhaust air stream along with carry over spillages will contaminate the duct work, exhaust fan, outside buildings and finally become a source of huge Environmental Pollution.
